Rösti rounds with burratina

Rösti rounds can really be topped with anything. How about a trendy little burrata with rocket cream and sweet and sour tomatoes?

Ingredients:

• 8 Aviko Hashbrown Röstiko Rounds
• 100 ml white wine vinegar
• 1 tbsp sugar
• 8 brightly colored cherry tomatoes
• 25 g arugula + extra
• 1/2 clove of garlic
• 2 tbsp extra virgin olive oil
• 1 tbsp crème fraîche
• 8 Burratinas

 

Method

Preparation: 25 minutes

  • Heat the wine vinegar with the sugar in a saucepan until the sugar has dissolved. Halve the tomatoes and put them in a bowl. Pour the sweet and sour marinade over it and leave to cool.
  • Prepare the rösti rounds according to the instructions on the packaging. In the meantime, mash the arugula with the garlic and olive oil. Stir in the crème fraîche and season the arugula cream with salt and pepper.
  • Place the rösti rounds on a platter. Spoon a spoonful of arugula cream on each round. Put a burratina on top. Garnish with the sweet and sour tomatoes and some extra arugula.
